A Crazy Easy Caprese Galette

A pie crust plus the delicious trifecta of tomato, basil & tomato makes this one of the most yummy lunches ever!

...and, it's insanely easy.

You can make this tomorrow.

1. Preheat your oven to 400

2. Unwrap one of these and set it out on your pizza stone, if you have one.

3. In the middle of the crust in a circle, layer slices of tomato, mozzarella and fresh basil.

4. Sprinkle all the tomato goodness with salt and pepper and drizzle with 1TB of olive oil.

5. Curl up the sides of the pie crust around the filling.

6. Rub some olive oil on the crust and sprinkle with a little more salt and pepper.

7. Take a horrible picture of your creation with your blackberry, because you never use your camera anymore, but you should.

8. Bake for 35ish minutes or so, until the crust is finished.

9. Let set for at least ten minutes, if you can wait that long. It will smell yummy.

10. Get too distracted by the yummy Galette and an episode of Mad Men to take a picture of the finished dish.

Enjoy!
