Roasted Beets With Goat Cheese

I love beets. Love them. And after a neighbor brought roasted beets to a recent BBQ, I knew I had to try my hand at making them at home. There is something quite magical about trying something new and working with real, fresh vegetables. 








Roasted Beets with Goat Cheese
4-7 beets
A few garlic cloves
Olive oil
S&P
Goat Cheese
Zest of one orange


Scrub the beets, wrap in foil with whole garlic cloves, olive oil, salt and pepper. Cook at 375 for up to an hour, depending on the size of your beets. Let cool till you can handle and peel beets. Chop, top with chunks of goat cheese and orange zest. ENJOY!


Warning: peeling beets is MESSY. My kitchen looked a bit like a crime scene, so be careful and clean up right away before that crazy beet redness dyes anything. But, it was well worth it. This recipe was healthy and nourishing indeed ... which is exactly what we've been hunting for.

I believe my grandpa has beets in he garden right now! Going to his garden on Saturday! Also, corn is AT IT'S BEST right now...in the words of grandpa!

A friend introduced me to fresh beets last year. Had a FABULOUS roasted beet and goat cheese salad last fall. Grew my own beets this year. I bought some goat cheese and I'm roasting some tonight! YEAH!!!
